Beef Stuffed Cauliflower Roasted Brains

Ingredients:
1 small size cauliflower
10 oz of ground beef
3 oz of chopped onions
2 tbsp of butter
2 tbsp of shredded cheddar cheese
1 tbsp of flax mill
2 tbsp of olive oil
0.5 cup of crushed tomatoes
1 tsp of paprika powder
1 tsp of garlic powder
1 tbsp of Worcestershire sauce
2 tsp of salt
Parsley for garnishing
Balsamic cream for a decor
Needed:
Instructions
Boil a medium size pot of salted water
Preheat the oven to 400
Cut cauliflower stem off and blanch it entirely for 5-7 minutes, take out and cool down
In a skillet add olive oil and butter, sweat onions until golden brown
Transfer half of sweated onions to a mixing bowl and let it cool
Add minced beef, shredded cheddar, spices, flax, salt to the bowl and mix well
Add tomatoes to a skillet with remaining onions and simmer at low for 20-30 minutes
Season with Worcestershire sauce and salt to taste and keep warm.
Cut cauliflower from the middle and edges forming ‘brain lobes’
Stuff with it beef mixture between flowers and underneath
Roast in the oven for 30 minutes
Serve over tomato sauce and use some balsamic cream to stress out ‘meanders’ on the top, garnish with parsley
