Cut cabbage into sectors, cut plums in half and pit them. Put cabbage and plums in baking tin, season with 2 Tsp of salt, cumin seeds, top with slices of butter and bake for 35 minutes.
Chop onions finely, combine it with ground beef, psyllium, remaining 2 Tsp of salt, 4 Tbsp of EV olive oil, sriracha and pepper. Mix well. Add water and mix again.
Preheat 12” skillet to a medium high. Form koftas from the beef mixture with hands and sear them from all sides with olive oil to a golden brown, transfer koftas to a baking tray and send them to the oven for 10 minutes.
Plate roasted cabbage and plums, and koftas, garnish with cream cheese and scallions.
