Instructions

  • Preheat oven to 400ºF / 200ºC
  • Slice avocado in half, and remove the stone, and break eggs individually into avocados - your eggs must be very fresh
  • Bake for 12 minutes
  • Zest and juice half a lemon, Add the chilli, parsley, red wine vinegar and extra virgin olive oil
  • Season, serve with parmesan and chilli vinegar
