Instructions

  • In a sauce pan boil at least 2 quarters of water, add vinegar and carefully beat in eggs one by one, cook until poached 2-3 minutes, immediately transfer to a serving plate once they are ready, season with salt.
  • While eggs are boiling preheat a nonstick skillet to a medium low. Dice onions and sweat with butter until they get translucent.
  • Add ground beef to the onions, mix well and raise the heat to a medium high. Cook 7 minutes stirring occasionally until done, season with salt and pepper at the end.
  • While the meat is cooking slice tomatoes, avocado, cheese and plate them each next to other.
  • Plate the beef once it ready, garnish with arugula, splash vegetables all around with olive oil and lemon juice, season them with pinches of salt and pepper.
